Head Kitchen Porter
Role Responsibility
The Head Kitchen Porter will be responsible for:
- Supervising Kitchen Porters, managing performance and training where necessary
- Assisting the Head Chef with the management of Health & Safety in the Kitchen
- Ensuring the Kitchen is kept clean, and that processes are maintained to ensure standards are met
- Assisting the Head Chef with the Management of the Kitchen Porter’s rotas
- Assiting where necessary with washing all kitchen crockery, cutlery, kitchen utensils and equipment, food service equipment.
- Ensuring that the following are kept clean and tidy and to a very high standard: Floors & Walls.
Bins – inside and out.Crushing and disposal of cardboard and boxes.Fridges & Freezers (with assistance of chefs).Back yard and delivery areas
- Maintain cleanliness and safety of working
- To be aware of and to adhere to all health and safety, fire, hygiene and HACCP regulations governing the work you are undertaking and to ensure the correct chemicals/detergents are used at all times.
- To report all accidents (and near misses) to the head of the kitchen
- To report any sightings of pests to the senior chef immediately.
- To report any defects in the building, machinery or equipment to the head of the kitchen.
- To report any shortages in equipment or chemicals to the head of the kitchen.
- To carry out any other reasonable request of the kitchen management.The Ideal Candidate
The ideal Head Kitchen Porter will have:
- Previous experience in kitchen hygiene and standards delivery
- Previous experience in managing a small KP team
- Physical fitness and the ability to lift heavy objects is essential
- Ability to work under pressure and in hot environments
- Attention to detail and high standards of cleanliness
- Flexibility on working hours
- Can-do attitude
- Effective communication skills
- Food hygiene certification is desirable

Chef de Partie Job Description Tasks and responsibilities
1. To run and supervise any kitchen section to the required standards set by the Head Chef
2. To ensure all preparation of the designated section is complete and ready for each service
3. Ensure good stock and waste control is practised
4. Be responsible for the quality control of stock and prepared foods
5. Execute cooking to the expected high standard quickly and efficiently
6. Ensure the cleanliness and organisation of designated section
7. Support head (sous) chef in delivering required standard of food
8. Appropriately delegate jobs to junior chefs and apprentices and support them in their development
9. Maintain a positive and proactive attitude at all times and seek to improve and advance your skill set and performance
10. Comply with all health and safety regulations, the Staff Code of Conduct and company policies
11. Perform other duties as assigned by the head chef and management
